CHOCOLATE CAKE

Ingredients:

1 and 3/4 cups of all-purpose flour
3/4 cup of unsweetened cocoa powder
2 cups of granulated sugar
2 teaspoons of baking soda
1 teaspoon of baking powder
2 large eggs
1 cup of buttermilk (or 1 cup of milk mixed with 1 tablespoon of vinegar or lemon juice, let sit for 5 minutes)
1/2 cup of vegetable oil
2 teaspoons of vanilla extract
1 cup of boiling water


Instructions:

Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans (approximately 23 cm) or grease them with parchment paper.
In a large bowl, sift together the flour, cocoa powder, sugar, baking soda, baking powder, and salt.
Add the eggs, milk, vegetable oil, and vanilla extract to the dry ingredients. Beat at medium speed for about 2 minutes until well combined.
Add the boiling water to the mixture. The batter will be a little thin, but that's normal.
Pour the batter slowly into the prepared cake pans.
Bake in the preheated oven for about 30 to 35 minutes, or until a toothpick inserted into the center comes out clean.
Remove the cakes from the oven and let them cool in the pans for about 10 minutes. Then, transfer them to a cooling rack to cool completely.
Once cooled, you can cover the cake with your preferred frosting or enjoy it without any topping at all!
